RECIPES: REALLY SIMPLE BEAN BURGERS (CURRY MAYO)

ingredients:

(1) can black beans  (drain them, mash them)                                                                                                                                        

(1) can refried black beans                                                                                                                                                                    

(1) cup dried breadcrumbs                                                                                                                                                                      

(2) large eggs                                                                                                                                                                                            

(1) tsp. black pepper                                                                                                                                                                            

(1/2) tsp. garlic powder

*you can add slivers of carrots, if you like.

mix them all together in a medium-sized bowl, entering them into the bowl in order that they are listed above.

put olive oil in pan, put patties in accordingly.

top with: tomatoes, onions, and cheese, lettuce.

The first burger I ate on bread, the second on a bed of lettuce. I think I prefer the lettuce! Delicious!

CURRY MAYO:

(3/4) cup mayonnaise                                                                                                                                                                            

(1) tsp. curry powder                                                                                                                                                                                 

(1/2) tsp. yellow mustard                                                                                                                                                                        

(1) tsp. water                                                                                                                                                                                          

(1) tsp. vinegar                                                                                                                                                                                          

(1/4) tsp. black pepper

mix it all together.

Ingredients

  • 1 7-8 lb. seedless watermelon, chilled
  • 1/2 cup extra virgin olive oil
  • 3 limes, juiced
  • 1 1/2 tsp salt
  • 3/4 tsp black pepper
  • 1 cup fresh chopped mint leaves
  • 1 1/2 cups crumbled feta cheese (goat or sheep milk feta is best)
